Having followed several chef friends I began to see them all visiting the same farms, chaperoned by the same man, Matt Chatfield. Matt connects farmers and chefs and was kind enough to bring me into his work of regenerative agriculture. Doing away with pesticides and destructive farming techniques, the movement focuses on soil health and a 360 degree process that helps feed and sustain itself. One key discovery is the important of livestock in the process, though not in the mass market form many of us know.
